Ingredients

- 2 – 3 large onions
- 500 ml chicken broth
- 60 g grated cheese (Gruyere or Comté cheese)
- Knob of butter
- Salt and pepper
- A few slices of farmhouse bread
- Peel and finely chop the onions. Sauté the onions in a knob of butter until golden brown.
- Add the chicken broth, then salt and pepper.
- Simmer for 20 to 30 min.
- Toast the bread slices and cut into medium-sized chunks.
- Pour the soup in the Gratin bowls. Place the toasted bread chunks on top and sprinkle over the grated cheese.
- Grill in the oven at 200°C for a few minutes.
- Serve immediately.
Tips
You can also deglaze the onions with white wine before adding the chicken broth. And for more flavour, add a bouquet garni to the chicken broth.
