French onion soup

Onion soup, a comforting classic of French cuisine, embodies warmth and simplicity. This savoury soup is a blend of the caramelised sweetness of onions, rich beef stock and cheese au gratin on a slice of toasted bread. Ingredients

    • 2 – 3 large onions 
    • 500 ml chicken broth 
    • 60 g grated cheese (Gruyere or Comté cheese) 
    • Knob of butter 
    • Salt and pepper 
    • A few slices of farmhouse bread 
  • Peel and finely chop the onions. Sauté the onions in a knob of butter until golden brown. 
  • Add the chicken broth, then salt and pepper. 
  • Simmer for 20 to 30 min. 
  • Toast the bread slices and cut into medium-sized chunks. 
  • Pour the soup in the Gratin bowls. Place the toasted bread chunks on top and sprinkle over the grated cheese. 
  • Grill in the oven at 200°C for a few minutes. 
  • Serve immediately. 

Tips

You can also deglaze the onions with white wine before adding the chicken broth. And for more flavour, add a bouquet garni to the chicken broth.
