Apple puff pastry pockets

Ingredients

    • 3 apples 
    • 1 lemon 
    • 50 g / 1 ¾ oz / ¼ Cup granulated sugar 
    • 1 g / ¼ tsp ground cinnamon 
    • 80 g / 3 oz / ¼ Cup Strawberry Jam 
    • 1 tsp vanilla extract 
    • 300 g / 10 oz pu pastry 
    • 30 g / 1 oz / 2 tbs melted, unsalted butter 

1. Cut the apples (unpeeled) into small 1 cm / ½ inch cubes and cover with lemon juice. 

2. Preheat your oven to 180°C / 350°F / gas mark 4. 

3. Combine the sugar and cinnamon in a small bowl. Mix together the strawberry jam and vanilla extract in a separate small bowl. 

4. Roll out the pu pastry dough and cut 6 squares of approximately 15 cm / 5 inch. 

5. Place a pastry square on your lightly greased Baking Tray and brush it with melted butter. 

6. Place 1 tablespoon of the strawberry jam mixture in the centre of the square. 

7. Top with apple cubes, then fold the corners of the square over the top until the tips are touching and press lightly together. 

8. Repeat with the remaining squares. 

9. Brush the remaining melted butter over all 6 pockets and sprinkle over a little of the sugar and cinnamon mixture. 

10. Place your Baking Tray in the oven and bake for about 25 minutes, until pu ed and golden. 

Tip:

You may sprinkle a little bit of the cinnamon mix over the apple cubes before folding the pastry over.
